Lola-tested ✓Watermelon Coolers
- 3/4 cup seedless watermelon puree (all seeds removed)
- 1/4 cup peeled cucumber puree
- 1 tbsp plain Greek yogurt (unsweetened, unflavored)
- 1 tsp finely chopped parsley (flat-leaf only)
- Blend watermelon and cucumber until smooth.
- Stir in Greek yogurt and chopped parsley until fully combined.
- Pour the mixture into silicone molds.
- Freeze for at least 4 hours, or until fully set.
- Pop out and serve frozen.
