Watermelon Coolers

10-15 MIN PREPFREEZE · 4 HRSNO-COOK
  • 3/4 cup seedless watermelon puree (all seeds removed)
  • 1/4 cup peeled cucumber puree
  • 1 tbsp plain Greek yogurt (unsweetened, unflavored)
  • 1 tsp finely chopped parsley (flat-leaf only)
  1. Blend watermelon and cucumber until smooth.
  2. Stir in Greek yogurt and chopped parsley until fully combined.
  3. Pour the mixture into silicone molds.
  4. Freeze for at least 4 hours, or until fully set.
  5. Pop out and serve frozen.
↳ tip: Use seedless watermelon or pick out every seed before blending — even the small pale ones. Store in freezer up to 2 weeks.

Carrot Kefir Clusters

10-15 MIN PREPFRIDGE · 1 HRNO-COOK
  • 1/2 cup plain kefir (unsweetened, unflavored)
  • 1/2 cup finely blended rolled oats
  • 1/4 cup finely grated carrot
  • 1 tbsp pumpkin puree (plain 100% pumpkin, not pie filling)
  1. Stir kefir, oats, grated carrot, and pumpkin together until evenly combined.
  2. Let the mixture sit for 5 minutes so the oats soak up the kefir and thicken.
  3. Scoop small clusters onto a parchment-lined tray.
  4. Refrigerate until firm, then serve straight from the fridge.
↳ tip: A small cookie scoop keeps the clusters even. Chill a full hour so they hold their shape. Store in fridge up to 5 days.

Blueberry Yogurt Drops

  • 1/2 cup plain Greek yogurt (unsweetened, unflavored)
  • 1/4 cup mashed blueberries
  • 1/4 cup finely blended rolled oats
  • 1 tsp chia seeds
  1. Mash the blueberries in a small bowl until juicy.
  2. Stir in Greek yogurt, blended oats, and chia seeds until smooth.
  3. Spoon small drops onto a parchment-lined tray.
  4. Refrigerate until set, then serve chilled.
↳ tip: Bite-sized portions work best here. Always check the yogurt label for xylitol before serving. Store in fridge up to 5 days.
